    I still love reading your blog, even though I don't comment very often... This post got me curious though as to why you have the paper under the cake as you put the icing on it? Is it to keep your beautiful plate clean, or to center your cake, or for some other reason? Just wondering, as I always enjoy learning more about cake decorating.

      Thanks for commenting. I use the papers to keep the plate clean as I am frosting the cake.
