Blueberry, maple, pecan salad



Salad
    Baby spinach
    Pecans
    Orange pepper, sliced
    Blueberries
    Red onion, sliced (optional)
    Bleu cheese, crumbled (optional)

Dressing
    1/4 cup maple syrup
    1/3 cup apple cider vinegar
    1/2 cup mayonnaise
    2 tablespoons brown sugar
    3/4 teaspoon salt
    1/4 teaspoon black pepper
    1/4 cup olive olive

In a blender, combine the first six ingredients. With the blender on low speed drizzle in the olive oil. Continue blending for about a minute until the dressing is creamy. 

Refrigerate dressing.
